Green fig preserves - anyone made them?
The Brown Turkey is carrying a large second crop of so far unripe fruit.
The first crop was good, as good a year as I can recall. Seven ripe fruit, which is not bad for a tree in a pot. We have never had a proper second crop. Nothing ripens before it gets too cool. This year may be an exception, but regardless we are going to have a lot of green figs. I've been looking on t'Internet and there are recipes for green fig jam, which involve boiling and squeezing them twice to get the "bad taste" out (I assume the white sap from immature fruit) and then boiling them in syrup so they take it up and swell up again. It does sound interesting, but as a diabetic I'm off jam because of the sugar content. Anyone made any? I did find an Italian recipe to fry them, but wasn't excited by it. Anyone done anything with green figs? I assume anyone with an unrestrained tree would usually have loads. I was a bit suspicious - looked as though the idea was to use the fibrous parts of immature figs as a sponge to soak up syrup, with not much flavour contributed by the fig. Hmmm...recalling that you have had problems getting a first crop off your Brown Turkey. Will try to remember to post a picture of ours so you can see how restricted the roots are.
