Default Beetroot sown last year

Beetroot was sown mid-August last year.
That was too late.
It hasn't grown much.
Roots are about half-inch diameter.
Plants look very healthy.
If they are left, will they just continue growing and turn into useful
sized beetroot?

Likely they will expend their energy flowering and producing seed.

No.


It'll bolt first. Pick the young leaves and eat them as salad,
or stir-fry them.

Follow the advice on the seed packet. Which is not to sow them in August.
You can't sow many veggie seeds in August for them to do well.

Unfortunately it's unlikely that they will grow well now. It's best you pull them out and try again. In the right conditions beetroot will grow very well with little effort.
