Also while walking in the near the sea, in extensive dunes I discovered
this, didn't think to include leaves though. It is about 6" tall and 1"
diameter.

That one's an orchid. That much is beyond doubt. Can be tricky things to identify exactly, and inclined to form hybrids, but I think that one's a pyramidal orchid Anacamptis pyramidalis.

Yes, pyramidal. The other one with very plain pink flowers is fragrant orchid, but it's a cooler pink and with a more elongated spike.

The blue flower is very familiar but I can't remember the name!

just a green manure.
