Default Asparagus

The other day someone enquired about when asparagus should appear. I cut
the first dozen spears two days ago and very nice they were on toast with
Hollandaise sauce. However, in cutting the spears with the filleting knife
I use for mackerel, I think I damaged a few developing spears. The sudden
jerk forward when the knife gets through the stalk is difficult to control,
so I'm buying an asparagus knife from the gonegardening site (cheaper than
the 50 quid I was told about) for it seems that a sawing action might be the
best way to cut the stuff.

Why not sharpen your knife? I use an ordinary kitchen knife, and have
no trouble. Yes, a sliding motion is better than simply pushing, but
that also applies to cutting meat, fruit and other vegetables!
