I'm hoping to use double-pane glass door inserts as greenhouse roof. Does
anyone have suggestions on framing these in, or experience with such as
glazing?

Not sure what you mean by glass door inserts. Why would you need to glaze
them if they are already in a frame? (I'm assuming they are if they are
double-pane). If not, you had better do a damn good job with the points or
that thing's going fall out.
