Can some kind person please advise what is the best style to

Sorry Baz, to decide on a style from your description is nigh on impossible.
Privet could be grown in virtually all styles. I would just keep cutting back all new growth repeatedly to 2 leaves to increase ramification for now. Could you get a photograph onto our gallery?
