Do I need to cut back the stem all the flowers were on when I bought
it? Every last flower has finally fallen off. Two 'canes' appear to
have been cut back before but two shoots are appearing from the base of
one of them and another has the tiniest possible nub appearing on the
cane itself.

No! They store nutrients for the plant and may well re-flower too. Cut
them off when they wither.

Thanks, Bob. I thought cutting it back would be a bit weird as it's all
plump and shining green!
